Steamed Egg ala Apples and Dumplings

This is the second time I made this. The first time, I put too much stuff in it. It was good but the BOS said it has too many stuff, he wants more egg. I cooked this last Friday during the vacation.

This is a very easy recipe. A no-fail recipe for non-cooks like me! My mom used to cook this for us when we were single pa. She puts more stuff in it but I have limited ingredients, it's still good!

Steamed Egg ala Apples and Dumplings(or Chawan Mushi)

What you need:
4 pcs Medium Eggs, beaten (this will yield about 1 cup of eggs or more)
1 cup Water (egg and water should be of equal parts, adjust accordingly)
3 pcs Crab sticks, chopped
1/3 cup dried mushrooms (I used about 5 to 6 pcs of mushrooms)
1/4 cup spring onions (optional)

Steps:
- Wash the dried mushrooms and soak them in water until soft (this will take about 30 minutes or so)
- Set aside the water from the mushroom.
- Chopped mushroom into bits or dice them.
- In a glass bowl or stainless bowl, mix beaten eggs, mushroom, crab sticks, and spring onions (optional).
- Measure mushroom water, add water if needed to have equal parts with the eggs. Add mushroom water to the mixture.
- Steam for about 20 to 30 minutes. When water is boiling, don't cover the pot entirely. I poke the egg to check if it's cooked already LOL.

That's it! This can serve 3 to 4, but if you're matakaw like us (me and BOS), it was enough for the both us lang. Haha..
